Google has updated the Learning video structured data documentation to add the full list of supported academic values for educationalLevel. It now lists out the values per country, since each country has its own academic system.
The revised docs have a drop-down to see by country what those levels are for each country. It says "Each country has its own academic system. Set the educationalLevel to one of the supported academic level values, based on the applicable country for the video."
